OC means original (O) character (c) a character that you made yourself in short.
Canon would be the characters that already exist in the show. For 101 dalmatians example, the canon characters are: Lucky, Rolly, Cadpig, Spot, Mooch, etc..
While OC's would be our characters like Nemo, Clayton, Olwe, Appette, Shadow, etc...

Yeah, Nemo is correct.
Canon is an item in fiction which is considered to be, Genuine. Like saying...A normal episode of "101 Dalmatians The Series", that is real, that is "Canon". However, an episode of a "What If!?" World, where say...Cruella wins the Dearly Farm, That would be considered, "Non-Canon".
For OC, I believe that is short of "Original Character".
Liver counts as an "OC" because she isn't an actual "101 Dalmatians" character, created by Dodie Smith or Disney. ;3
Nemo's examples are correct as well. ;3
Still, I hope this clears things up, Chloe. X3 Wonder what you have in mind. X3
